Safety - Sanitation
More than a decade ago, The National Restaurant
Association Educational Foundation recognized the need for food safety
awareness and created the International Food Safety Council (Council) as
its food safety awareness initiative. The Council’s mission is to decrease
incidences of foodborne illness in the foodservice industry through
heightened awareness of food safety education and implementation of best
practices. The Council is charged with identifying and defining high
priority food safety issues for foodservice operations and recommending
solutions for these establishments. The Council will also pursue
actionable outcomes and solutions by developing industry best practices.
The Council envisions a future where foodborne illness no
longer exists. Through its educational programs, the Council reaches
foodservice instructors, restaurant operators, suppliers, manufacturers,
distributors, as well as organizations such as healthcare facilities,
colleges and universities, supermarkets, associations and other
stakeholders in the industry. The most significant educational program is
National Food Safety Education Month, which was created and presented a
decade ago. Each September, restaurant and foodservice professionals
across the country demonstrate their unwavering commitment to food safety
through showcasing their educational activities. The Council offers
educational and promotional materials free to the industry, to reinforce
food safety education. Since its inception, the Council is proud to report
increased participation with each year.
